Peach Mango Tofu Pancakes

Try these low-carb, tofu infused pancakes for a hearty, protein rich breakfast. Serve them with a drizzle of maple syrup and some peach slices on the side.

Prep time: 20 – 30 minutes     Servings: 6

INGREDIENTS:
1 package (300g) Sunrise Peach Mango Dessert Tofu
4 large eggs, beaten
1/3 cup all purpose flour
2 Tbsp melted butter
1/4 tsp salt
1/4 tsp vanilla

DIRECTIONS:
1.    Place dessert tofu in bowl & mash with a fork.
2.    Add eggs & blend together.
3.    Add flour, butter, salt & vanilla. Mix until blended.
4.    Spoon batter onto nonstick skillet and cook over medium heat until golden brown.
5.    Flip and cook another 2 minutes.
6.    Serve warm with your favorite maple syrup, if desired.
