Tofu Gingerbread Cake

This moist cake is perfect for holiday entertaining or as a tasty treat to have on hand throughout the festive season.  You can lightly dust the cooled cake with icing sugar for a decorative touch.

Servings: 16   Prep time: 15 minutes + 40 minutes baking time  

INGREDIENTS:
1 pkg (2 x 150g) Sunrise Tofu Dessert
½ cup margarine
1 cup sugar
½ cup molasses
¼ tsp salt
1 tsp cinnamon
¼ tsp clove
1 tsp ginger
2 tsp baking powder
¼ tsp soda
2 cups flour
1 tsp sugar

DIRECTIONS:
1.    Preheat oven to 350F.
2.    Mix all ingredients (except for the final 1tsp of sugar) together until well blended -  about 1 minute.
3.    Pour into an 8x8 greased and floured pan. 
4.    Sprinkle reserved 1 tsp sugar on top.
5.    Bake for about 40-45 minutes or until a toothpick comes out clean. 
6.    Cool and serve. Sprinkle with icing sugar if desired.
