    This refreshing salad is perfect for parties on the patio! Enjoy it served in individual cups or throw it together in a large bowl for family-style sharing.

    Ingredients

    ¾ pkg Sunrise Medium Firm Tofu , crumbled
    2 ripe, medium-sized avocados , pitted and cubed
    2 ripe, medium-sized mango , pitted and cubed
    2 tbsp canned/jarred roasted red pepper , chopped
    2 tbsp olive oil
    2 tbsp balsamic vinegar
    ½ tsp salt
    1 tbsp brown sugar
    1 bag tortilla chips

    Directions

    1. In a large bowl, combine all ingredients. Gently mix until well combined. Cover and refrigerate for 1 hour.
    2. Spoon ingredients into individual glass cups or bowls. Serve with tortilla chips.
