This refreshing salad is perfect for parties on the patio! Enjoy it served in individual cups or throw it together in a large bowl for family-style sharing.
|¾ pkg||Sunrise Medium Firm Tofu , crumbled|
|2||ripe, medium-sized avocados , pitted and cubed|
|2||ripe, medium-sized mango , pitted and cubed|
|2 tbsp||canned/jarred roasted red pepper , chopped|
|2 tbsp||olive oil|
|2 tbsp||balsamic vinegar|
|1 tbsp||brown sugar|
|1 bag||tortilla chips|
- In a large bowl, combine all ingredients. Gently mix until well combined. Cover and refrigerate for 1 hour.
- Spoon ingredients into individual glass cups or bowls. Serve with tortilla chips.
