This refreshing salad is perfect for parties on the patio! Enjoy it served in individual cups or throw it together in a large bowl for family-style sharing.
Ingredients
¾ pkg | Sunrise Medium Firm Tofu , crumbled |
2 | ripe, medium-sized avocados , pitted and cubed |
2 | ripe, medium-sized mango , pitted and cubed |
2 tbsp | canned/jarred roasted red pepper , chopped |
2 tbsp | olive oil |
2 tbsp | balsamic vinegar |
½ tsp | salt |
1 tbsp | brown sugar |
1 bag | tortilla chips |
Directions
- In a large bowl, combine all ingredients. Gently mix until well combined. Cover and refrigerate for 1 hour.
- Spoon ingredients into individual glass cups or bowls. Serve with tortilla chips.
