    Tofu Spinach Dip

    Ingredients

    1 pkg Sunrise Medium Firm Tofu , blended
    1 cup water chestnuts , chopped
    300g frozen chopped spinach , defrosted
    1 pkg vegetable soup mix
    1 cup light mayonnaise

    Directions

    1. Put the tofu in a food processor and blend until smooth. Transfer tofu to a medium bowl.
    2. Drain the water chestnuts and chop in food processor until coarsely chopped. Add spinach and pulse 2-3 times.
    3. Add the chestnuts, spinach, soup mix and mayo to the tofu and mix well.
    4. Cover and refrigerate for at least one hour.
    Tip

    Make it vegan by using vegan mayonnaise
