    Tofu Miso Kale Salad

    A light refreshing salad perfect for the summer season. The miso-lemon vinaigrette will become a new favourite.



    1 pkg Sunrise Smoked Tofu , cubed
    1 bunch kale, stems removed
    2 Tbsp olive oil
    ⅓ cups extra-virgin olive oil
    3 Tbsp lemon juice
    1 tsp lemon zest , (optional)
    1 Tbsp miso paste
    1 clove garlic , minced
    2 tsp stone-ground mustard
    1 Tbsp maple syrup
    Pinch of pepper & pepper


    1. In a bowl whisk together all the dressing ingredients
    2. Remove stems from kale, and slice thinly, place in a large bowl
    3. Add 2 Tbsp. oil over the kale and massage salad with your hands (this enhances kales flavor and softens the leaves)
    4. Toss with the dressing and the sliced tofu and serve
