    Tofu Shawarma

    Enjoy with a dairy-free tofu tzatziki

    Ingredients

    1 pkg Sunrise Extra Firm Tofu , cut into ¼ inch strips
    1½ tsp Cumin Powder
    1½ tsp Coriander Powder
    1½ tsp Garlic Powder
    1 tsp Turmeric Powder
    1 tsp Paprika
    ¼ tsp Cayenne Powder
    ¼ tsp Clove Powder
    1 Medium Onion , sliced
    2 tbsp Sesame Oil
    2 tbsp Soy Sauce
    4-6 Small Pita Bread
    Tofu Tzatziki
    ½ pkg Sunrise Medium Firm Tofu
    1 tbsp Olive Oil
    2 tbsp Lemon Juice
    ¼ cup Cucumber , grated
    1 Large Clove Garlic , minced
    Salt and Pepper , to taste
    Parsley Salad
    1 bunch Parsley Leaves , washed and chopped
    ½ English Cucumber , diced
    1 cup Cherry Tomatoes , quartered
    1 Small Lemon , juiced
    1½ tbsp Olive Oil
    Salt and Pepper , to taste

    Directions

    Tofu Tzatziki:

    1. In a blender, blend tofu with olive oil and lemon juice until smooth.
    2. Transfer tofu mixture to a bowl and mix in grated cucumber, garlic, and salt and pepper. Refrigerate.

    Parsley Salad:

    1. Toss all ingredients together and refrigerate.

    Tofu Shawarma:

    1. Mix dry spices in medium bowl. Add sliced tofu, gently toss to coat tofu.
    2. Heat oil in a large non-stick frying pan on medium-high heat. Add sliced onions and cook for 3 minutes, then add the spiced tofu and soy sauce. Fry for 2 minutes per side, or until tofu is golden brown on all sides.
    3. Serve in warm pita bread with parsley salad and tzatziki.
