Enjoy with a dairy-free tofu tzatziki
Ingredients
1 pkg | Sunrise Extra Firm Tofu , cut into ¼ inch strips |
1½ tsp | Cumin Powder |
1½ tsp | Coriander Powder |
1½ tsp | Garlic Powder |
1 tsp | Turmeric Powder |
1 tsp | Paprika |
¼ tsp | Cayenne Powder |
¼ tsp | Clove Powder |
1 | Medium Onion , sliced |
2 tbsp | Sesame Oil |
2 tbsp | Soy Sauce |
4-6 | Small Pita Bread |
Tofu Tzatziki
½ pkg | Sunrise Medium Firm Tofu |
1 tbsp | Olive Oil |
2 tbsp | Lemon Juice |
¼ cup | Cucumber , grated |
1 | Large Clove Garlic , minced |
Salt and Pepper , to taste |
Parsley Salad
1 bunch | Parsley Leaves , washed and chopped |
½ | English Cucumber , diced |
1 cup | Cherry Tomatoes , quartered |
1 | Small Lemon , juiced |
1½ tbsp | Olive Oil |
Salt and Pepper , to taste |
Directions
Tofu Tzatziki:
- In a blender, blend tofu with olive oil and lemon juice until smooth.
- Transfer tofu mixture to a bowl and mix in grated cucumber, garlic, and salt and pepper. Refrigerate.
Parsley Salad:
- Toss all ingredients together and refrigerate.
Tofu Shawarma:
- Mix dry spices in medium bowl. Add sliced tofu, gently toss to coat tofu.
- Heat oil in a large non-stick frying pan on medium-high heat. Add sliced onions and cook for 3 minutes, then add the spiced tofu and soy sauce. Fry for 2 minutes per side, or until tofu is golden brown on all sides.
- Serve in warm pita bread with parsley salad and tzatziki.
