Spinach dip, so rich and creamy, is a popular appetizer, but a diet pitfall. Try our version with medium firm tofu and fat free mayo for a healthy and guilt-free alternative – only 1g of fat per serving!

INGREDIENTS:
1 package (454 g) Sunrise Medium Firm Tofu or 1 and 1/3 package of Soyganic Premium Medium Firm Tofu
1 cup water chestnuts, chopped
300g frozen spinach, defrosted and cut into pieces
1 package (40g) vegetable soup mix
1 cup fat free mayonnaise
DIRECTIONS:
1. Put the tofu in a food processor and blend until smooth. Transfer tofu to a medium bowl.
2. Drain the water chestnuts and cut them into small pieces.
3. Add the chestnuts, spinach, soup mix and mayo to the tofu and mix well.
4. Cover and refrigerate for at least one hour.
