Kimchi Tofu Stew

It is a simple quick high protein lunch or dinner that you can whip up in under 15 minutes. All you really need are kimchi, tofu, and basic ingredients. You don’t even need gochujang!

Ingredients
½ pkg | Sunrise Smooth Freshpack Tofu |
½ can | luncheon meat , cubed |
½ | onion , sliced |
2 tbsp | sesame oil |
½ cup | kimchi , roughly chopped |
½ cup | kimchi juice |
½ cup | water |
1 tbsp | sugar |
1 stalk | green onion , chopped |
Directions
- In a small to medium stove pot, add sesame oil and turn heat to medium high. Cook the sliced onion and cubed luncheon meat and sauté for 1-2 minutes. Once the onions become translucent and aromatic, add in your chopped kimchi.
- Sauté the kimchi for 2 minutes until slightly caramelized.
- Add kimchi juice, water, and sugar and mix thoroughly. Lower heat to medium.
- Cut tofu into 3-4 even slabs and gently incorporate into the stew, taking care not to break it apart. Let it cook for 2-3 minutes and garnish with chopped green onions.
- Enjoy with rice!
