Steamed Egg Tofu with Minced Pork

Ingredients
1 pkg | Mandarin Egg Tube Tofu , sliced (approx. 1” thick) |
2 | eggs , beaten |
¾ cup | water |
1 tsp | salt |
1 tbsp | garlic , minced |
200g | ground meat (beef, pork, or chicken will work) |
1 tbsp | dark soy sauce |
1 tsp | oyster sauce |
1 tsp | chili bean paste (doubanjiang) |
1½ tsp | sugar |
¼ cup | water |
¼ cup | green onions , chopped |
Cornstarch slurry:
1½ tsp | cornstarch |
2 tbsp | room temperature water |
Directions
- Arrange the sliced egg tofu on a large shallow heat-proof plate (that can be steamed). In a separate bowl, beat together 2 eggs and ¾ cup of water. Add salt.
- Pour beaten egg mixture on top of the sliced egg tofu through a sieve. Steam on medium heat for approximately 12-15 minutes or until the mixture is completely set.
- In another pan on medium heat low heat, add in minced meat, garlic, and toss for 30 seconds until garlic is aromatic and meat is cooked through.
- Add in dark soy sauce, oyster sauce, chili bean paste, sugar, and water. Stir until combined.
- Turn heat to low, and add in your cornstarch slurry (mix cornstarch and room temp water).
- Pour meat mixture on top of steamed egg tofu and top with chopped green onions.
Tip
Putting a large plate upside down on top of the heat-proof plate can prevent water droplets from dropping onto the egg during steaming.
