Vegan Tofu Palak Paneer

Why does no one talk about this? I just found out that you can substitute Paneer with Extra Firm Tofu in my favourite dish, Palak Paneer!

Ingredients
1 pkg | Sunrise Extra Firm Tofu , cut into small cubes |
2 tbsp | neutral oil |
500g | frozen chopped spinach |
1 | medium yellow onion , diced |
1 | medium tomato , diced |
½ tbsp | garlic , minced |
½ tbsp | ginger , minced |
1 | jalapeno , diced (and seeds removed) |
6 tsp | garam masala spice mix |
1 tbsp | dried fenugreek (optional) |
½ pkg | Sunrise Silken Tube Tofu |
Salt (to taste) |
Directions
- Cut Sunrise Extra Firm Tofu into small cubes and add it to a large bowl. Submerge it in hot water for 5 minutes and drain.
- In the same skillet or wok, add 1 tbsp of oil and toss in your diced onion, tomato, jalapeno, garlic, and ginger. Toss for 3-5 minutes until aromatic and onions become translucent. Then add in the garam masala spice mix. Sauté for another 2-3 minutes.
- Add frozen spinach and sauté for another few minutes until spinach is completely thawed and has released enough water. Add in a few tablespoons of water at a time until it gives you a sauce-like consistency.
- Transfer everything into a blender and toss in half a tube of Sunrise Silken Tube Tofu. Add salt to taste.
- Pulse a few times if you want some texture, or blend completely if you want a smooth sauce.
- Transfer mixture back to the skillet or wok, and add in your cubed tofu. Also sprinkle in crushed dried fenugreek (optional). On low heat, reheat the mixture and simmer for an additional 5 – 10 minutes. Stir occasionally so the tofu is well incorporated into the sauce.
- Serve this on top of some hot basmati rice and enjoy!
