Baked Tofu with Hot Honey Noodles

Ingredients
| 1 pkg. | Sunrise Baked Tofu , cut into cubes |
| 200g | wide rice noodles |
| 1 tbsp | vegetable oil , divded |
| 1 | red pepper , sliced |
| 1 cup | snow peas , cut into strips |
| ½ cup | matchstick carrots |
| 2 | garlic cloves , minced |
Hot Honey Sauce
| 2 tbsp | honey |
| 1 tbsp | sesame oil |
| 1 tbsp | soy sauce |
| 2 tsp | lime juice |
| 2 tbsp | rice vinegar |
| 2 tbsp | sriracha |
| 2 tbsp | water |
Directions
- Bring a large pot of water to a boil for the noodles.
- Heat ½ tbsp oil in a large non-stick frying pan over medium heat. Add the tofu and cook for about 5 minutes, turning occasionally until lightly browned. Transfer to a large bowl.
- Cook the noodles according to package directions, being careful not to overcook.
- Add the remaining ½ tbsp oil to the same pan. Add the red pepper, snow peas and carrots and cook for 3 minutes. Add the garlic and cook for 30 seconds, until fragrant. Transfer the vegetables to the bowl with the tofu.
- Whisk together the sauce ingredients. Pour into the pan and heat until just bubbling. Add the drained noodles and toss to coat. Return the tofu and vegetables to the pan and toss everything together until evenly coated.
- Divide between bowls and garnish with scallions and sesame seeds.
