Basil Pesto Caprese Flatbread

The pesto in this recipe is quickly infused into the tofu, giving the flatbread some nice creamy texture with strong savory flavours
|1 pkg||Sunrise Extra Firm Tofu , crumbled|
|¼ cup||basil pesto sauce|
|1||piece flatbread or naan bread|
|6-8||cherry tomatoes , sliced|
|½ cup||bocconcini cheese , sliced|
|8-10||fresh basil leaves|
- Preheat the oven to 175ºC (350°F).
- Mix 30 mL (2 Tbsp.) of basil pesto and crumbled tofu together, set aside. Spread remaining pesto sauce over the flat bread.
- Evenly place the tomatoes, tofu mixture and cheese on top. Bake for 5-10 minutes or until the cheese has melted.
- Top with fresh basil and serve.
