Basil Pesto Caprese Flatbread

The pesto in this recipe is quickly infused into the tofu, giving the flatbread some nice creamy texture with strong savory flavours



1 pkg Sunrise Extra Firm Tofu , crumbled
¼ cup basil pesto sauce
1 piece flatbread or naan bread
6-8 cherry tomatoes , sliced
½ cup bocconcini cheese , sliced
8-10 fresh basil leaves


  1. Preheat the oven to 175ºC (350°F).
  2. Mix 30 mL (2 Tbsp.) of basil pesto and crumbled tofu together, set aside. Spread remaining pesto sauce over the flat bread.
  3. Evenly place the tomatoes, tofu mixture and cheese on top. Bake for 5-10 minutes or until the cheese has melted.
  4. Top with fresh basil and serve.
