Smoked Tofu Split Pea Soup

Ingredients
1 pkg | Sunrise Smoked Tofu Original , cubed |
2 Tbsp | olive oil |
1 | onion , diced |
1 tsp | dried thyme |
2 cups | carrots , cubed |
2½ cups | celery , chopped |
3 cloves | garlic , minced |
6 cups | vegetable broth |
2 cups | water |
2½ cups | of dried green split peas , (presoaked overnight or 8 hours in water) |
2 | bay leaves |
1 tsp | salt & pepper |
croutons , (optional) |
Directions
- Rinse and pre-soak your green split peas in a large bowl of water for at least 8 hours or overnight
- In a large pot with a lid, on med-high heat, heat 2 tablespoons of olive oil, enough to cover the bottom of the pot
- Add in your dried thyme and onions and sauté for around 2-3 minutes until the onions are translucent
- Add in the carrots, celery and garlic. Cook for another 3 minutes
- Next pour in the broth, water, split peas, bay leaves and salt and pepper
- Cover and bring to a boil then reduce the heat to low and simmer for 1.5-2 hours or until the peas are broken down and the soup is thickened
*make sure to stir the bottom of the pot every 20-30 minutes, so the peas don’t stick - Before serving add in smoked tofu and bring soup to a boil again to heat through
- Serve with croutons
