Smoked Tofu Split Pea Soup

Ingredients

1 pkg Sunrise Smoked Tofu Original , cubed
2 Tbsp olive oil
1 onion , diced
1 tsp dried thyme
2 cups carrots , cubed
2½ cups celery , chopped
3 cloves garlic , minced
6 cups vegetable broth
2 cups water
2½ cups of dried green split peas , (presoaked overnight or 8 hours in water)
2 bay leaves
1 tsp salt & pepper
croutons , (optional)

Directions

  1. Rinse and pre-soak your green split peas in a large bowl of water for at least 8 hours or overnight
  2. In a large pot with a lid, on med-high heat, heat 2 tablespoons of olive oil, enough to cover the bottom of the pot
  3. Add in your dried thyme and onions and sauté for around 2-3 minutes until the onions are translucent
  4. Add in the carrots, celery and garlic. Cook for another 3 minutes
  5. Next pour in the broth, water, split peas, bay leaves and salt and pepper
  6. Cover and bring to a boil then reduce the heat to low and simmer for 1.5-2 hours or until the peas are broken down and the soup is thickened
    *make sure to stir the bottom of the pot every 20-30 minutes, so the peas don’t stick
  7. Before serving add in smoked tofu and bring soup to a boil again to heat through
  8. Serve with croutons
