Tofu Bhurji

Ingredients

1 pkg Sunrise Medium Firm Tofu , mashed
1 Tbsp oil
½ tsp cumin seeds
½ onion , finely chopped
¼ tsp turmeric powder
1 tsp ginger , minced
1 tsp garlic , minced
2 medium tomatoes , chopped
1 green chili , finely chopped
½ tsp cumin powder
½ tsp red chili powder
½ tsp chaat masala
½ tsp garam masala
½ tsp coriander powder
salt to taste
cilantro for garnish

Directions

  1. In a medium pan, heat oil on medium heat. Add cumin seeds and sauté until fragrant. Add onions, turmeric powder, ginger and garlic. Sauté for 1-2 min until onions are translucent.
  2. Add tomatoes and green chilies. Cook for 2-3 min until tomatoes are soft.
  3. Add cumin powder, red chili powder, chaat masala, garam masala, coriander powder and salt. Combine with mixture and cook for 1 min.
  4. Add mashed tofu and mix until tofu is well coated.
  5. Cover and allow the tofu to heat through and brown. Garnish with cilantro and serve hot with rotis or chapati.
