Baked Tofu Fried Rice

Ingredients
| 1 pkg. | Sunrise Baked Tofu , cut into slices |
| 3 cups | white rice , cooked |
| 3 tbsp | canola oil , divided |
| 1 cup | broccoli florets |
| 1 cup | carrots , thinly sliced |
| 2 eggs | eggs |
Peanut Sauce (optional)
| 1 tbsp | soy sauce |
| 1 tbsp | rice vinegar |
| ½ tbsp | sesame oil |
| 1 tsp | honey |
| ½ tsp | ginger , grated |
| 1 tbsp | peanut butter |
Directions
- Heat a large non-stick pan over medium-high heat. Add 1 tsp oil and cook the tofu for about 2 minutes per side, until golden. Transfer to a large bowl.
- In the same pan, scramble the eggs until just set. Add to the bowl with the tofu.
- Add the remaining oil to the pan, then add the rice. Cook for 3 to 4 minutes, stirring occasionally, until heated through and lightly crisped.
- Add the broccoli and carrots and cook for 4 to 5 minutes more, stirring frequently, until tender-crisp.
- Whisk together the peanut sauce ingredients. Pour into the pan and stir well to coat the rice and vegetables.
- Return the tofu and eggs to the pan and toss everything together. Garnish with scallions and serve.
