One Pot Roasted Pork and Tofu Rice Cooker

What if I told you that you can make this roasted pork and tofu claypot rice, in a rice cooker?

Ingredients
| 1 pkg | Sunrise Fried Tofu , sliced in quarters |
| 6 | shiitake mushrooms (dehydrated or fresh) , sliced |
| 200g | roasted pork |
| 6 | ginger slices |
| 2 tsp | minced garlic |
| 1 tbsp | soy sauce |
| 1 tbsp | Shaoxing wine |
| 1 tbsp | oyster sauce |
| 1½ tsp | sugar |
| ¾ cup | water |
| 1 cup | lettuce , shredded |
| 2 stalks | green onions , cut into 1-inch pieces |
Cornstarch Slurry:
| 1 tbsp | cornstarch |
| 1 tbsp | room temp water |
Directions
- In a rice cooker, combine Sunrise Fried Tofu, sliced shiitake mushrooms, roasted pork, ginger, and garlic. Then add in your seasoning (soy sauce, Shaoxing wine, oyster sauce, sugar). Add in ¾ cup of water. Mix well.
- Click the white rice setting and let it cook until the rice cooker says it is done. Roughly 30 minutes.
- In the meantime, combine cornstarch and room temp water to make a cornstarch slurry.
- Once the rice cooker mixture is done, open the lid, and pour in your cornstarch slurry. Immediately stir the mixture to avoid any clumps.
- Add in lettuce and green onions. Close the lid for 3-5 minutes.
- Enjoy with rice!
