Seasoned Tofu Crispy Rice Bowl

The beauty of this recipe is using the tofu straight out of the package, no cooking required!

Ingredients

1 pkg Sunrise Seasoned Tofu
2 cups white rice , cooked
1½ tsp sesame oil
1 tbsp soy sauce
1 mango , diced
1 cup edamame
1 cup napa cabbage , shredded
1 red finger hot chili , sliced thinly
Dressing
¼ cup Greek Yogurt
1 tbsp chili crisp
1 tbsp lime juice
1 tsp honey
1 tsp fish sauce
Garnish
Scallions

Directions

  1. Toss the cooked rice with sesame oil and soy sauce. Spread in an even layer in the air fryer and cook at 400°F for 7 minutes, stir, then cook another 7 minutes until crispy.
  2. In a small bowl, whisk together the dressing ingredients.
  3. In a large bowl, combine the crispy rice, tofu, mango, edamame, cabbage and chili.
  4. Add the dressing and toss gently to combine.
  5. Divide between serving bowls and garnish with scallions.
Tip

Alternate Oven Method for Crispy Rice: Preheat the oven to 425ºF. Spread the rice onto a rimmed baking sheet in a thin, even layer. Bake for 20 to 30 minutes, until crispy and lightly browned (darker at the edges). Let cool for 5 minutes, then break into pieces.
