Seasoned Tofu Crispy Rice Bowl

The beauty of this recipe is using the tofu straight out of the package, no cooking required!
Ingredients
| 1 pkg | Sunrise Seasoned Tofu |
| 2 cups | white rice , cooked |
| 1½ tsp | sesame oil |
| 1 tbsp | soy sauce |
| 1 | mango , diced |
| 1 cup | edamame |
| 1 cup | napa cabbage , shredded |
| 1 red finger | hot chili , sliced thinly |
Dressing
| ¼ cup | Greek Yogurt |
| 1 tbsp | chili crisp |
| 1 tbsp | lime juice |
| 1 tsp | honey |
| 1 tsp | fish sauce |
Garnish
| Scallions |
Directions
- Toss the cooked rice with sesame oil and soy sauce. Spread in an even layer in the air fryer and cook at 400°F for 7 minutes, stir, then cook another 7 minutes until crispy.
- In a small bowl, whisk together the dressing ingredients.
- In a large bowl, combine the crispy rice, tofu, mango, edamame, cabbage and chili.
- Add the dressing and toss gently to combine.
- Divide between serving bowls and garnish with scallions.
Tip
Alternate Oven Method for Crispy Rice: Preheat the oven to 425ºF. Spread the rice onto a rimmed baking sheet in a thin, even layer. Bake for 20 to 30 minutes, until crispy and lightly browned (darker at the edges). Let cool for 5 minutes, then break into pieces.
