Tofu Spinach Dip

Ingredients
1 pkg | Sunrise Medium Firm Tofu , blended |
1 cup | water chestnuts , chopped |
300g | frozen chopped spinach , defrosted |
1 pkg | vegetable soup mix |
1 cup | light mayonnaise |
Directions
- Put the tofu in a food processor and blend until smooth. Transfer tofu to a medium bowl.
- Drain the water chestnuts and chop in food processor until coarsely chopped. Add spinach and pulse 2-3 times.
- Add the chestnuts, spinach, soup mix and mayo to the tofu and mix well.
- Cover and refrigerate for at least one hour.
Tip
Make it vegan by using vegan mayonnaise
